I'm happy to hear your appliance problem is over, Susan. And I just love your idea of the appliance repairman (or woman), who maybe moonlights as a geriatric prostitute! You could name his company something similar to Sears (but not similar so as to get sued!) to get back at them.

My oven... It's not an American type oven, BTW. And actually it has one regular sized unit, and a slightly smaller unit above it. That way I can bake dairy in one, and meat stuff in the other. But it turns out that investing in the Kosher thing was at the expense of the quality. DH (kindly) suggests that I banged the door too hard and something in the convection was damaged. It doesn't make noise during the first half hour, but then it begins to sing - think regular convection amplified times fifty...

I still do a lot of baking, though - but it's difficult to speak on the phone.

Penny,
I'd bet that something in your convection fan got bent out of shape just by a tiny bit and when the temperature rises in the oven the expansion of some part causes it to rub on something else....my very non-technical description of my totally non-qualified diagnosis!  I'll bet it's an easy repair....if you can find a good repairman!
